Savory is an aromatic herb with a spicy, tangy taste reminiscent of thyme and oregano, but with an even stronger note. In the kitchen, it is mainly the fresh or dried leaves that are used, whose delicacy and pungency provide a wonderful seasoning for savory dishes. Savory is used particularly in the preparation of pulses such as beans, lentils and peas, as it aids the digestion of pulses and reduces the typical flatulence.

Savory was already valued as a spice and medicinal plant in ancient Greece and Rome. The Romans used it not only to season dishes, but also as a natural remedy for stomach complaints and flatulence. In the Middle Ages, it found its way into monastery gardens, where it was mainly used to aid digestion and as a calming agent. Today, savory is an indispensable herb in classic Mediterranean cuisine and is particularly widespread in French and Italian cuisine.

Savory belongs to the labiate family and is closely related to other popular herbs such as thyme and oregano. It grows bushy and can grow up to 40 cm high. In summer in particular, it develops small, purple to violet flowers, which are also edible and can be used in the kitchen. These flowers are not only pretty to look at, but also contribute to the herb's spicy aroma.

In the kitchen, savory is mainly used in stews, soups and sauces. Its flavor is particularly effective in the preparation of bean dishes or pulses, as it balances out the earthiness of the beans with its intense spice. Savory also adds an interesting depth of flavour to meat dishes such as lamb, pork or poultry. In combination with other herbs such as rosemary, thyme and sage, it creates a harmonious blend of herbs that is ideal for stews or marinades.

Savory is best added towards the end of the cooking process, as it loses its aroma slightly during long cooking. When used fresh, it develops its pungent, spicy note particularly well. It is also ideal for preparing herb butter, dips or in marinades for grilled meat and vegetables.

Savory is therefore a true classic in herbal cuisine, which is not only traditionally used in the preparation of pulses and stews, but is also a valuable addition to many Mediterranean and rustic dishes. Especially in vegetarian dishes such as lentil soups or bean pans, it can add a deeper layer of flavor and bring out the flavors of the ingredients perfectly.
