Lovage, also known as Maggie's herb, is a strong, aromatic herb with an intense flavor that is strongly reminiscent of the seasoning of the well-known broth. Dried lovage is particularly popular in the kitchen as it retains its intense flavor even after drying. The full aroma of lovage is particularly evident in stews, soups and sauces, where it is considered an indispensable ingredient.
In ancient Greece and Rome, it was not only valued as a spice, but was also used as a medicinal plant, particularly for gastrointestinal problems and to aid digestion. In the Middle Ages, lovage found its place in monastery gardens, where monks used its healing properties. Today it is grown in many gardens and markets around the world and has become an integral part of the cuisine of many cultures.
Lovage belongs to the umbellifer family and can grow up to two meters high. The strong, coarsely toothed leaves develop their unmistakable, spicy flavor, especially when freshly picked, but the taste remains very intense even after drying. The small, yellow umbel flowers that appear in summer are also edible, but have a milder taste than the leaves.
Due to its intense aroma, dried lovage is mainly used in the kitchen in strong dishes where it serves as a spice and flavoring agent. It goes particularly well with hearty soups, such as a classic vegetable soup, meat dishes, but also with stews or as an ingredient in broths. In combination with other herbs such as parsley, thyme or rosemary, it gives dishes a balanced, spicy depth.
As dried lovage develops its aroma well, it is often added at the beginning of the preparation to enrich the dish right from the start. The herb is particularly suitable for the classic “Maggie” broth, which is enhanced by the natural flavor of lovage. Lovage also provides a wonderfully hearty seasoning in combination with potatoes or in casseroles.
It is also used in a variety of ways in vegetarian cuisine, for example in vegetable stir-fries, herb quark or in dips and salads. Lovage also cuts an excellent figure as an ingredient in aromatic herb oil or homemade herb butter.
Our tip: Experiment with dried lovage in a homemade broth! Boil water with a mixture of dried lovage, carrots, celery, onions and a little salt. This aromatic broth is a perfect base for soups or as a hearty drink on cooler days.
