Spoiled by the Spanish summer: Our wild lavender honey
From June to August is the flowering time of the lavender. If it is not too dry or wet and not too hot or cold (all parameters must be right), then it is the perfect time for bees to collect nectar from the wild lavender. The beguiling scent of the purple flowers attracts the bees and they are rewarded with plenty of nectar. This produces a strong and spicy honey, the darker the colour of the wild lavender honey. The colour varies from year to year, but is usually darker than other honeys.
Wild lavender honey has no therapeutic properties, but the oils extracted from the lavender do. The taste of wild lavender honey makes up for this, and it is therefore an integral part of French gourmet cuisine.
