Caraway seeds have an intense, spicy flavor with a slightly bitter note and are particularly popular in European and Middle Eastern cuisine. Both the seeds and the essential oil of caraway are used, whereby the oil is particularly known for its digestive effect.

Caraway has been used as a spice and medicinal plant for centuries. The first references to the use of caraway date back to ancient Egypt, where it was used not only as a spice but also as a remedy for digestive problems and to aid digestion. Caraway was also valued in ancient Greece and Rome, and the Greek physician Dioscorides recommended it in his “Materia Medica” to alleviate stomach complaints. In the Middle Ages, caraway found a home in monastery gardens and was cultivated both as a spice and as a remedy for various ailments. Caraway still has a long tradition in German, Scandinavian and Eastern European cuisine in particular.

Caraway belongs to the umbellifer family and grows to a height of up to 60 cm. The seeds are often used in savory dishes such as stews, sauerkraut, meat dishes or bread. Caraway is also an important ingredient in spice mixtures such as the classic “five-spice powder” used in Chinese cuisine and is used in many traditional recipes for sausages.

Caraway is versatile, whether as a spice for baked goods such as a caraway stick or Bavarian caraway bread. But caraway is also a good choice for hearty dishes. Try Saxon caraway meat, a pointed cabbage salad with caraway seeds and egg or add a pinch of caraway seeds to your roast potatoes.
Or use caraway in a classic sauerkraut dish instead of juniper berries or try it in a spicy carrot stew. Roast the caraway seeds in a pan beforehand to intensify the flavor.

Another use for caraway is in the production of caraway schnapps and other spirits, where it is valued as an aromatic ingredient. Caraway essential oil is also used in aromatherapy, as it has a calming and digestive effect.
