Tarragon is a perennial herbaceous semi-shrub from the daisy family. It reaches heights of 60-120 cm and its fragrance is reminiscent of aniseed. Tarragon is mainly found in Eastern Europe, Asia and North America, but is now even cultivated in the Arab world. It is harvested several times a year, especially the leaves from the first harvest of the year contain the most essential oils and are therefore highly valued for their intense flavour.
Cooking tip: For salmon dishes, we recommend placing a sprig on each side of the salmon and searing carefully on both sides. Turn carefully so that the twig is not damaged.
