Botany, origin and history
The blackcurrant (*Ribes nigrum*) belongs to the gooseberry family (Grossulariaceae) and is native to Europe and parts of Asia. Today, it is cultivated worldwide, particularly in temperate climates where it thrives and develops its intense aroma. Blackcurrants are renowned for their deep, fruity flavour as well as their health benefits – they are naturally rich in vitamin C and antioxidants. The berries are enjoyed both fresh and processed, commonly used in jams, juices, syrups and fine liqueurs. As early as the Middle Ages, blackcurrants were valued for their medicinal properties and were often referred to as a “herbal fruit.” They were traditionally used in monasteries and herbal medicine to strengthen the body and support overall well-being. Over time, their bold flavour and versatility made them an essential ingredient in European cuisine and beverage culture.
The origin of Crème de Cassis
Crème de Cassis originates from France, more specifically from the Burgundy region, where it has been produced since the 18th century. The liqueur gained particular popularity in the town of Dijon, which is still considered the historical heart of Crème de Cassis production today. French producers perfected the method of macerating blackcurrants in alcohol and carefully sweetening the extract to preserve the fruit’s intense aroma and natural colour. The name “Crème” does not refer to dairy, but to the high sugar content, which gives the liqueur its smooth, velvety texture. Over the centuries, Crème de Cassis became an integral part of French drinking culture and achieved international fame through the classic Kir cocktail – a simple yet elegant combination of dry white wine and Crème de Cassis. The more luxurious Kir Royal, made with Champagne, later elevated the liqueur to a symbol of refinement and celebration.
