Cloves were already known in India in ancient times, but were only introduced to Europe in the Middle Ages by Dutch spice traders who brought them from the Moluccas to Europe. Cloves are now cultivated worldwide.
The essential oils have a content of up to 15%.
The clove belongs to the myrtle family and is an evergreen tree up to 10 meters tall, originally from the Moluccas. The name clove comes from the Dutch "Negelkin", which means nail, as cloves are reminiscent of small nails.
Cloves are traditionally used in Christmas cookies, but they are also very versatile in marinades and sauces, although only used sparingly due to their intense flavor. Try adding a little clove powder to a lamb ragout with almonds, wild boar goulash with sour cherries or a beet soup.
