Stick Fish Spice Salt with Lemon and Paprika

Stick fish has a long tradition in Bavaria. In the past, freshly caught whitefish or carp were grilled on a wooden stick over an open fire. Today, trout is the most popular fish for the classic Wiesn stick fish. Our spice salt delivers the perfect harmonious blend of lemon, paprika, and fine herbs that gives the fish its characteristic aromatic flavor and crispy skin.
 

Versatile Use – For Grill, Pan, and Oven

Whether prepared as traditional stick fish on the grill, in the pan, or in the oven – our stick fish spice salt gives trout, mackerel, char, or carp a wonderfully spicy aroma and an appetizing golden-brown, crispy skin. Simply sprinkle generously inside and outside the fish.
 

Original Bavarian Wiesn Stick Fish – Preparation

For the classic stick fish, wash the trout thoroughly, gut it, and pat it dry with kitchen paper. Then brush it lightly with sunflower oil. Generously season the fish inside and out with our stick fish spice salt.

Push a wooden stick (approx. 60 cm long) through the mouth all the way to near the tail. Position the fish at an angle, head down, over the grill. Turn the fish only rarely during grilling so it does not slip off the stick. Brush occasionally with a little oil to prevent the skin from drying out. As soon as the skin starts to blister, the stick fish is ready.

Our tip: Before serving, drizzle with a few drops of freshly squeezed lemon juice. It is traditionally served with pretzels (Brezn) or bread rolls.
