Bavarian Obazda - quick and easy to make yourself.
Obazda, also known as Obatzter, is a Bavarian cheese specialty. It is often eaten as a snack with fresh radishes and pretzels, accompanied of course by a beer. Obazda is served in every Bavarian beer garden as well as at the Wiesn (Oktoberfest) with slightly varying spices.
To make use of almost dried Camenbert or Brie, these were cut into small pieces, cream cheese was added and then stirred with a fork and the dry cheese pieces were mashed until a consistent mass was formed. As overripe Camenbert or Brie has a very intense flavor, more cream cheese was added accordingly.
Depending on the region, this mixture is called Obazda or Obatzter in Bavarian, which means batz or pressed, mashed, squashed or crushed.
Obazda is then seasoned with paprika, caraway, pepper, salt, onions and chives.
Nowadays, of course, fresh Camenbert or Brie is used, but Obazda is still a great way of saving old soft cheese leftovers from being thrown away. You still have to cut the Obazda into pieces and mash it, even if you are using fresh Camenbert or Brie. For 200g of soft cheese, you need 100g of sour cream or cream cheese and 2-3 teaspoons of our Obazda seasoning. If you prefer a less compact mixture, use 100g soft cheese and 100g cream cheese. Then leave to soak in the fridge for approx. 30 minutes.
Our tip: To make it easier to mash and stir in the Obazda seasoning, add a dash of beer. This has always been done this way and makes your Obazda softer and creamier and gives it a fine aroma.
